One of my favourite days of the year! I will be cooking pancakes in the studio on Tuesday morning, it promises to be great craic, you can watch live by clicking on the radio show page on the website and watch the action as it happens. If you are a pancake fan as well, I will share my recipe with you.

Ingredients:
350 g all-purpose flour
20 g baking powder
10 g salt
25 g white sugar

555 ml milk
1-7/8 egg
80 g butter, melted
Directions:

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
